Pumpkin Bread

1 large can of pumpkin pure  which is about 29 oz (not the pie filling, kind!)
7 eggs
2 cups of canola oil
1 1/3 cup of water
3 tsp salt
2 tsp of cinnamon
2 tsp of nutmeg
1/8 tsp cloves
3 cups of splenda
2 cups of sugar
3 cups of wheat flour
3 cups of white flour
4 tsp of baking soda

Streusel Topping"
1/2 cup of oatmeal
2 tablespoons of brown sugar
1 tablespoon of pumpkin spice

top each loaf pan with streusel and bake!

Makes 3 loafs taking an hour to bake at 350


Homemade Vegetable Soup

1 Green Cabbage (I picked a medium one nothing too big)
1 yellow onion chopped finely
5 carrots chopped finely
2 stalks of celery chopped finely
6 red potatoes peeled and chopped
2 cans of diced tomatoes (whatever kind you like)
32 oz of beef stock
3 bouillon cubes
spices (sage, italian seasoning, parsley and a bay leaf)
I used about 1/2 tablespoon of each and 1 bay leaf
It is all based on your judgement and what you like in your soup!
1 bag of frozen corn
1 bag of frozen green beans
1 bag of frozen peas and corn
you can find the frozen veggies at kroger for $1 each!


Get a big pot the biggest one you got! Turn the stove on medium heat and place some olive oil in the pot. Cook the first five ingredients till tender will take about 15 minutes
After that put two cans of diced tomatoes refill both cans with water and place in the pot add the rest of the of the ingredients in the pot. If it feels to full and not enough liquid please add more water. Taste for seasoning you may need to add more salt and pepper. let it cook for about 30 minutes!

Homemade Cupcakes!

Tried homemade cupcakes last night and they were delicious!
1 1/2 sticks of butter
3 eggs
1 teaspoon of vanilla extract
3/4 cups of sugar
1 1/2 cup of flour
1 tablespoon of baking powder
2 tablespoons of milk

makes 12 of them baked at 20 minutes at 350 degree oven.

Frosting:
1 stick of cream cheese softened
1 cup of powdered sugar
1 teaspoon of vanilla extract

Steak and Beet Salad

1.5-2 cups of Spring Mix Salad
1/4 cup of beets (canned, walmart brand works)
2 tablespoons of feta cheese (frozen keeps it fresher longer)
1 tablespoon of chopped pecans
2 ounces of cooked steak (any will do, I prefer London Broil)
2 tablespoons of honey mustard dressing

Mixed Berry Pie- Holiday!

Pre-heat oven to 350 degrees
2 Deep Pie Crusts
2 Roll out pie crust
1 large bag of mixed berries
2 cans of cherry pie filling no sugar added
1 cup of splenda
1 egg whisked to brush on crust
fill the 2 deep pie crusts with filing
Top the pies with the roll out pie crust brush again with egg wash and splenda.

bake for an hour.

Beef Enchiladas

Pre-heat oven to 350 degrees

I make these enchiladas large, your preference

Your going to need a 13x9 baking pan or the largest one you have.  Spray it with non-stick spray.

Ingredients:
2 lb of ground beef
2 can of diced green chiles (if you want it spicy pick jalapenos)
2 cup of sharp cheddar cheese (1 1/2 cup for the filling,  the other half to top the enchiladas with)
2 large can of enchilada sauce (the red one, one for the filling the other to top the enchiladas with)
2 packages of tortilla

Cook the first 4 ingredients until cooked thoroughly.
Fill each tortilla with the filling and place in your baking pan.
Top the enchiladas with the rest of the red sauce and the cheese

Bake for 25 minutes!




Chicken Salad

Ingredients:

1 Rotisserie Chicken
3 Celery Stalks
1/2 cup of dried cranberries
3 tablespoons of light mayo
2 tablespoons of half and half

Chop up all the chicken, slice up the celery and toss all ingredients together taste great on crackers, and a hot croissant.

Mocha Chocolate Chip Banana Bread

Pre-heat oven to 350 degrees

Ingredients:
6 overripe bananas
1 cup of sugar free syrup
1/2 cup of whole milk
1/2 cup of canola oil
2 teaspoons of vanilla extract
2/3 cup of instant coffee
3/4 cup of cocoa powder
4 eggs
1 cup of splenda
3 cups of whole wheat flour
2 teaspoons of baking powder
1 teaspoon of baking soda
1 teaspoon of salt
1 1/2 cup of semi-sweet chocolate chips

Mix all ingredients
makes 3 loafs/or muffin tins
spray each pan with non-stick spray
bake for one hour.

Taste delicious!

Strawberry Crumb Pie

Pre-heat oven to 350

Ingredients for filling:
8-10 cups of fresh strawberries or frozen
1 lemon squeezed
1 tablespoon of cornstarch
1 cup of splenda

Mix all ingredients together
2 pie crusts (deep dish)

Crumb topping:
1 cup of oatmeal
1 cup of flour
2/3 of splenda
8 tbls of butter cut into cubes

Whip up one egg and brush on top of the crust.
Place the strawberries in the two pie crusts and place the crumb topping on top.
Bake for one hour.

Peach and Mixed Berry Pie

Pre-heat oven to 350 degrees

Ingredients:
A couple of ripe fresh strawberries (2-3)
2 cans of no sugar added peaches (rinsed)
1 1/2 cups of frozen mixed berries
1/4 cup of splenda brown sugar
1/2 of a lemon
1/4 teaspoon of cinnamon

Mix the ingredients and let it mesh together for at least an hour.

1 pie crust
1 roll out pie crust
1 egg
splenda.

Fill the pie and lace the roll out on top brush with an egg wash and splenda.

Bake for an hour.
